One of our staples, this meatloaf has extra fibre and veggie goodness, making if a perfect family meal
This meatloaf has added fibre and veggies, making it a brilliant family meal option! While it's cooking you make a delicious sweet tomato sauce to serve it with which the kids love!
- 500g of mince (beef or pork)
- 1 small courgette
- 2 cloves of garlic
- Salt and pepper
1 tbsp honey
1 tbsp worcester sauce
1 tbsp apple cider vinegar
1 teaspoon of dijon mustard
- Chopping board and knife
- Small saucepan
- Baking tray and paper
Preheat the oven to 170c fan assisted (190c non-fan assisted)
Grate the carrot and courgette and transfer to a mixing bowl
Finely chop the garlic and add to the mixing bowl with the mince, oats, egg and a pinch of salt and pepper
Stir thoroughly with a wooden spoon and then transfer the mix to a baking tray covered in parchment paper
Use your hands to shape the mix into a meatloaf shape. If it is too wet to hold its shape then transfer the mix back to the mixing bowl, add some more oats and then try again!
Pop your meatloaf in the oven for 50 minutes and while it’s cooking you can prepare your tomato sauce and any other vegetables you want to have with it
Pour all of the sauce ingredients into a small saucepan and simmer on a low heat for 15 minutes, stirring frequently
Cook your favourite veggies when the meatloaf has around 15 minutes left to cook
Ask for help to slice the meatloaf and serve covered in your yummy tomato sauce and veggies!
