These fibre rich homemade crackers are fun and easy to make, as well as being packed full of gut loving goodness! Cook up a batch at the weekend with your little cook and then enjoy having a week of healthy after school snacks at your fingertips!
1 x 400g tin of white beans (e.g. cannellini or chickpeas)
100g oat flour (whizz up 100g oats in a blender to make your own!)
2 cloves of garlic or 1 tsp garlic powder
Juice of half a lemon
50ml olive oil
Pinch of salt
1 tbsp nutritional yeast (optional)
Knife and fork
Preheat your oven to 170c (fan assisted)
Drain the beans and whizz them up in a food processor
Add everything else except the oil and blitz again until crumb like
Slowly add the oil until it turns into a dough like consistency - add a splash more oil if the mixture doesn't hold together when you squeeze it
Squeeze it into a ball and then roll it out on parchment paper until it's about 2-3mm thick - an excellent step to get kids involved in!
Use a knife to score the dough into cracker shapes and then prick the top with a fork to help it bake evenly
Bake for 40-50 mins - check after 40 to make sure it isn't burning (some ovens are hotter than others!)
Leave to cool and then break into crackers! Store in an airtight container for up to 5 days
