A quick and delicious tart to make when asparagus is in season, that works as breakfast, lunch or dinner!

A delicious Spring tart made with seasonal asparagus on a creamy cheesy base. Children love scoring the pastry and decorating the tart with the asparagus!

Ingredients

250g puff pastry
100g bacon lardons (optional)
200g creamy cheese e.g. ricotta, mascarpone, cream cheese - or use a mix of all of them!
20g grated parmesan
1 egg
1/2 lemon zest
1 tbsp fresh chopped chives
1 tbsp fresh chopped mint
Salt and pepper to taste

Grater
Knife
Mixing bowl and spoon
Measuring scales
Pastry brush
Fork
Small frying pan (if using bacon lardons)
Spatula

Directions

Pre-heat the oven to 180c (200c non-fan/gas 6) and sprinkle a little flour on your baking tray (this helps prevent the pastry sticking)
Roll out the pastry to about 15 x 30cm and the thickness of a £1 coin - transfer to your lightly floured baking tray
Crack the egg into a small bowl and whisk with a fork
Score a 1cm border around the pastry, making sure you don’t go all the way through the base. Prick the base with a fork and use a pastry brush to coat the edges of the tart with egg. Bake for 15 mins
If using bacon lardons, fry them until golden and crisp and then leave aside
Mix the creamy cheese, 1/2 lemon zest, chives, mint and half the parmesan in a bowl - add a little salt and pepper to taste
Once the base has cooked, push the centre down if it has risen and gently spread the cheese mixture on with a spatula
Scatter over the bacon if using and then arrange the asparagus on top in a nice pattern. Brush with a little oil, scatter over the remaining parmesan and bake for 20 more mins
