Make the pancakes by sieving the flour into a mixing bowl
Add the olive oil and then slowly add the water, whisking to create a smooth batter
Heat a little oil in a frying pan and let it get hot before adding a thin layer of batter, quickly swirling it around to make a circle
When the edges start to come away (2-3 mins), use a spatula to flip it over and cook for a further minute
Repeat until all of the batter is used up (it should make around 6) and then leave to one side on a plate. NB you may need to add more oil to the pan after you’ve made 2-3 pancakes
Next chop the red pepper, red cabbage, broccoli and carrot into thin slices, and finely chop the onion and garlic
Add a little more oil to the pan and fry the veg until softened (5-10 mins)
Stir in the cooked chicken, cream cheese and chopped rosemary leaves
To make the pancakes place a line of filling on the side of each pancake, roll up and place in a baking dish
Grate the cheese on top and grill for a few mins until the cheese has melted and started to go golden - serve immediately!
