Cauliflower is such as versatile vegetable, from cauliflower rice to fritters it really is the veg that keeps giving! This time we are making cauliflower bites, crispy cauliflower balls with a yummy cheese filling. These bites are brilliant healthy snacks, and a great addition to any lunchbox.
Pre-heat your oven to 170c (190c non-fan assisted, gas mark 4)
Shape into small balls and place on a baking tray with parchment paper, flattening slightly so they are disc-shaped. Even better, get the kids involved - they love shaping them into balls and squashing them on the baking tray
Cook for 20 mins, flip them over and then cook for another 10 mins
Once golden brown, remove the cauliflower bites from the oven and allow to cool before eating
Fun fact! Did you know cauliflower comes in 4 different colours!!! And a single floret contains 10% of your daily vitamin C.
