Ingredients

150g carrot (around 2 medium sized carrots)

100g pitted dates

80g walnuts

75g cashew nuts

50g honey

30g butter or coconut oil

20g desiccated coconut

10g chia seeds

1/2 a lime

1 teaspoon of vanilla essence

1 teaspoon cinnamon

Directions
- Soak the dates in a bowl of hot water for a few minutes
- Carefully peel and grate your carrots
Strain the dates and pop them in your food processor/blender with the grated carrot, walnuts, desiccated coconut, chia seeds and cinnamon
- Blitz until the mixture is fully combined and doesn’t have any big lumps left in it (it may take 2-3 mins)
- Remove the mixture and then use your hands to roll it into small balls about the size of a £1 coin
- Pop the balls on a plate or small container and place in the freezer while you make the icing
- To make the icing first pop the cashew nuts into a dry blender and blitz until flour like and smooth
Next gently melt the butter/coconut oil and add it to the cashew flour with the honey, the juice of half a lime and the vanilla essence
- Blitz until fully combined - add a small amount of water if the mixture is too thick to turn in the blender
- Now take your balls out of the freezer and use a teaspoon to coat the top half with your yummy icing! Pop in the fridge for 10 mins before gobbling!
